Superfast Salisbury Steak

  • 3/4 pound ground turkey breast
  • 3/4 pound ground round
  • 1/3 cup dry breadcrumbs
  • 2 large egg whites
  • Cooking spray
  • 3/4 cup water
  • 3 tablespoons tomato paste
  • 2 tablespoons Madeira wine or dry sherry
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/4 teaspoon freshly ground black pepper
  • 1 (10 1/2-ounce) can condensed French onion soup (such as Campbell’s)

Directions

  1. Combine first 4 ingredients. Divide meat mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add patties; cook 6 minutes or until browned, turning after 3 minutes. Remove patties from pan; keep warm. Stir in water and remaining ingredients. Bring to a boil; add patties. Cover, reduce heat, and simmer 10 minutes. Uncover and cook until wine mixture is reduced to 3/4 cup (about 10 minutes).

Italian Style Meatloaf

Ingredients:

  • 1 1/2 pounds 92% lean ground beef
  • 1 cup fat-free tomato-basil pasta sauce, divided
  • 1/2 cup Italian-seasoned breadcrumbs
  • 1/2 cup (2 ounces) preshredded fresh Parmesan cheese
  • 1/2 cup finely chopped onion
  • 1/3 cup chopped fresh flat-leaf parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large egg whites
  • Cooking spray

Directions

  1. Preheat oven to 350°.
  2. Combine beef, 1/2 cup pasta sauce, and remaining ingredients except cooking spray in a large bowl. Shape beef mixture into an 8 x 4-inch loaf on a broiler pan coated with cooking spray. Brush remaining 1/2 cup pasta sauce over top of meat loaf. Bake at 350° for 1 hour and 10 minutes or until a thermometer registers 160°. Let stand 10 minutes. Cut loaf into 12 slices.

Meatballs and Peppers

Ingredients:

  • 1 cup thinly sliced green bell pepper
  • 1 cup thinly sliced red bell pepper
  • 1 cup thinly sliced yellow bell pepper
  • 1 1/3 cups water
  • 1 (10 1/2-ounce) can beef consomme
  • 1 bay leaf
  • 1 (1-ounce) slice whole-wheat bread
  • 1 pound ground round
  • 1 tablespoon finely chopped onion
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 large egg white
  • 1 garlic clove, crushed
  • 2 teaspoons olive oil
  • 2 tablespoons all-purpose flour
  • 1/4 cup water
  • 1/3 cup finely chopped fresh or 1 1/2 teaspoons dried basil
  • 2 teaspoons white wine vinegar

Directions

  1. Combine the first 6 ingredients in a large saucepan. Bring to a boil; cover, reduce heat, and simmer 20 minutes.
  2. While the peppers are cooking, place bread in a food processor; pulse 10 times or until coarse crumbs form to measure 1/2 cup. Combine breadcrumbs, beef, and next 6 ingredients (beef though garlic) in a bowl, shaping mixture into 36 (1-inch) meatballs. Heat olive oil in a large nonstick skillet over medium-high heat. Add meatballs; cook for 10 minutes, browning on all sides.
  3. Combine flour and 1/4 cup water in a small bowl; stir with a whisk. Add to bell pepper mixture in saucepan. Add meatballs; cook 3 minutes, stirring constantly. Stir in the basil and vinegar. Remove bay leaf.
